Fenugreek is a
popular spice, which in our country flourishes almost everywhere, but most
frequently it is to be seen in Northeastern Bulgaria. Well known as an
irreplaceable spice of the ground dried herbs (the so called ‘sharena sol’),
fenugreek possesses a pleasant and savoury scent. It is also known as ‘chimen’
(in Bulgarian) and the Latin designation Trigonella
foenum-graecum. Fenugreek is an annual plant of the leguminous plant
family. The virtual widespread popular spice called fenugreek is prepared from
the seeds. There are two sorts of the plant: a garden one and a field one. In

fenugreek.
It is an annual
plant. The stalk has a smooth surface, high up to 35 inches; the plant has 5 to
7 nodes, the leaves are trilobate, oval with a remarkably dentate outer edge.
The blossoms are mauve, gathered in 30 to 35 racemes in little spikes, carried
by long footstalks. The capsules are shortovoid with 1 to 3 seeds. These are
tiny and yellowish.
